Cooking tip
Give it a full boil and a minute longer than the strands. Then finish it in the pan with a little butter so the ridges take on some colour.
About the spinach dough
The spinach goes into the dough, so the colour is the vegetable and not a dye. It tastes mild, closer to fresh pasta than to a bowl of greens.
